Punjabi chole masala or chana masala is one of the most popular curry dishes from India. In fact in north India no wedding or party is complete until you have chole masala on the menu. In our childhood, whenever we would call someone over for lunch or dinner, mom would almost always make chole.

Ingredients

  • 1 tbsp 1 vegetable oil

  • 1 large 1 onion, diced

  • 2 2 garlic cloves, minced

  • 2.5 cm of fresh ginger, peeled and grated

  • 1 1 green chilli, seeded and sliced

  • 2 tbsp 2 garam masala

  • 1 tsp 1 turmeric

  • 1 tsp 1 salt

  • 1 tsp 1 black pepper

  • 400 g 400 fresh tomato, diced

  • 425 g 425 boiled chickpeas

  • 120 ml 120 water

  • Lemon, juiced

  • 1 cup 1 fresh coriander leaves, chopped

  • Red chilli powder

  • Coriander powder

Directions

  • Rinse raw chickpeas overnight and boil in a pressure cooker.
  • Heat olive oil in a large stock pot or dutch oven over medium-high heat.
  • Add onion and cook until onion becomes translucent and begins to brown, about 3–5 minutes.
  • Add garlic, ginger and green chilli. Continue to cook over medium heat until ginger and garlic are fragrant and the green chilli turns tender, about 3–4 minutes.
  • Add salt, turmeric, red chilli powder, coriander powder, and garam masala, then continue to cook for 1–2 minutes.
  • Add tomatoes, chickpeas, and water. Stir to incorporate, making sure to use the spoon to scrape off any brown bits that have appeared on the bottom or sides of the pot.
  • As the tomatoes break down, the mixture should take on the texture of a thick stew. Add more water if needed before bringing everything to a simmer and then cover with a lid.
  • Once covered, cook for 15 minutes while stirring occasionally.
  • Remove lid, reduce heat to low and mix in the lemon juice and chopped coriander leaves.
  • Serve over basmati rice or with a side of naan.

Equipment

  • Large stock pot or dutch oven
  • Pressure cooker
  • Grater

Notes

  • Serve over basmati rice or with a side of naan.
  • The chickpeas need to soak overnight if you are using raw ones.
