Flija
Recipe by Erblina Sejdiu
Every happy story and celebration in Kosovo carries the flavour of Flija. Flija is unique both in taste and in the way it is made. It takes time, patience, and if prepared outdoors, even physical strength. To many Albanians, Flija is far more than a traditional dish. It is a symbol of identity and community, embodying our hospitality and deep respect for tradition. I’m grateful to share a piece of my home with all my WagArb friends.

600 g 600 flour
1,200 ml 1,200 water (adjust for a smooth batter)
300 ml 300 plain yoghurt
150 ml 150 melted butter (or oil for vegan version)
1 teaspoon 1 salt
Directions
- Heat the oven to 200 °C or prepare a traditional outdoor saç over medium-high embers.
- Mix flour, water, and salt until you have a smooth batter.
- In a separate bowl, combine yoghurt and melted butter for brushing.
- Add a thin layer of batter to the pan and cook for 5–7 minutes until set.
- Brush the layer with the yoghurt-butter mixture.
- Repeat layering – batter then brush – until 20–30 layers are complete.
- For the top layer, cook for 5–7 minutes at slightly higher heat (220 °C) to get a golden, slightly crisp finish.
- Serve warm, torn into wedges.
- I recommend enjoying it with fresh yoghurt.
Equipment
- Oven or traditional outdoor saç
- Large pan
- Two mixing bowls

Notes
