Japchae is a Korean glass noodle stir-fry. It is particularly popular on New Year’s day, Harvest festival and other festive holidays, but also an all-time crowd-pleaser on any given day. It can be served as a side dish as well as a main dish, e.g. on a bed of rice. Can be prepared vegetarian on demand. It is an extra investment in time, but very rewarding in culinary experience and flavor.

Ingredients

  • 200 g 200 Korean sweet potato starch noodles

  • 100 g 100 beef, cut into strips

  • 1 1 bunch of spinach

  • 1–2 garlic cloves, peeled and crushed

  • 1 1 onion, diced

  • 100 g 100 mushrooms

  • 1 1 carrot, julienned

  • 1 1 yellow bell pepper, sliced

  • 1 1 red bell pepper, sliced

  • 4–5 tbsp soy sauce

  • Roasted sesame oil

  • Salt and pepper

  • 1 tsp 1 and a pinch of sugar

  • A few splashes of white wine (or rice wine)

  • Roasted sesame seeds

Directions

  • Cook the noodles in boiling water for approx. 5 minutes, then drain and rinse in cold water. Let the water drain.
  • In a pan, sauté the beef strips with 1–2 tablespoons of soy sauce, some white wine (or rice wine), a pinch of sugar (and, if desired, some garlic) until done.
  • Wash the spinach, blanch for a few seconds, then squeeze the spinach to remove any excess water. Put into a mixing bowl and season it with salt, a bit of garlic and roasted sesame oil.
  • In a pan, sauté each remaining vegetable separately (onion, mushrooms, carrot, bell peppers) with a little vegetable oil of choice and salt and pepper to taste. Then transfer to a large mixing bowl.
  • Mix the noodles with three tablespoons of soy sauce and one teaspoon of sugar. Stir-fry gently in a pan oiled with vegetable oil until they are glazed.
  • Add all the vegetables except the spinach and sauté quickly. Transfer to a large mixing bowl, add the spinach and approx. one tablespoon of roasted sesame oil and mix well. Serve hot or cold with roasted sesame seeds on top.

Equipment

  • Large pan
  • Large mixing bowl
  • Pot for the noodles
  • Colander

Notes

  • Can be prepared vegetarian on demand – simply leave out the beef.
  • It can be served as a side dish as well as a main dish, e.g. on a bed of rice.
  • Serve hot or cold.
