Poke Bowl (For Busy Days)
Recipe by Fábio Cavalcante
Poke is one of the main dishes of the Hawaiian cuisine. Without apparent reason, it was a trend in São Paulo a few years ago. The beauty of this dish is that it is fresh, tasty and adaptable to personal preferences. Each dish is unique! If you make it yourself, preparing the mise en place is a great way to relieve daily stress. This dish is typically served cold.

150 g 150 smoked salmon (cubed and raw)
100 g 100 cooked shrimps
50 g 50 salmon caviar
Rice to serve (cooked with a bit of salt and black pepper)
Half red onion, thinly sliced (optional)
Half avocado (cubed)
Zest of half a lemon
1 tsp 1 soy sauce
Olive oil
Salt
Black pepper
Directions
- Mix salt, pepper, olive oil, lemon zest and soy sauce. Add the mix to the smoked salmon (mix gently so that the salmon does not break).
- Arrange the ingredients in a bowl. Do not mix them. Try to imagine the bowl as if it were a pizza so that each slice would be an ingredient.
- For a great colour effect, add the salmon caviar on top of the avocado.
- Serve immediately.
