Pretty Awesome Cheese Cookies
Recipe by Stephanie Wagner
If I had to choose between chocolate and cheese, I’d always go for the latter. No wonder I fell in love with these cookies the first time I had them. The recipe comes from Jim’s (my brother-in-law) mother and for all of you who still don’t know how to cut cheese the French way – good news: for this recipe, you just have to grate it.

100 g 100 flour
100 g 100 parmesan
125 g 125 butter
Directions
- All ingredients should be room temperature so they mix more easily. Grate the cheese, put it in a bowl together with the flour and the butter and work it all into a smooth dough ball. Wrap the dough with cling film and place in the freezer for 1 hour.
- Preheat the oven to 160 °C fan.
- Roll out the dough about 3 to 5 mm high – I use two layers of cling film and place the dough in between, so it doesn’t stick to the rolling pin and/or the countertop – and cut the cookies with any cookie form you like. However, since the dough is pretty sticky, you will do easier with simple shapes.
- Bake the cookies for 10–12 minutes or until they take on a golden color.
