Russian Salad (aka Olivier)
This salad is really popular in Russia and even despite the change in traditions, you can always find it on the New Year’s table, as it is one of the certain symbols of the New Year. It is customary to cook it prolifically – there is even a joke about a “huge Olivier basin”. The main advantage of this salad is that you can add the amount of each ingredient you prefer: you can add more potatoes, or cucumbers, or meat. The way you like it! In addition, the cucumber can be either fresh or pickled or salted (but do not mix!) as well as meat can be vegan.
