This is my go-to cake: reliably foolproof and always a crowd-pleaser. Even people who swear they “don’t like carrot cake” end up asking for seconds. It’s become the cake people associate with me, and I’m so happy to share it here.

Ingredients

  • 4 4 eggs

  • 295 ml 295 vegetable oil

  • 200 g 200 white sugar

  • 10 ml 10 vanilla extract

  • 250 g 250 plain flour

  • 9 g 9 bicarbonate of soda

  • 9 g 9 baking powder

  • 3 g 3 salt

  • 5 g 5 ground cinnamon

  • 330 g 330 grated carrots

  • 110 g 110 chopped pecans

  • 55 g 55 butter, softened

  • 110 g 110 cream cheese, softened

  • 200 g 200 icing sugar

  • 2 ml 2 vanilla extract

Directions

  • Preheat the oven to 175 °C. Grease your cake tin.
  • In a large bowl, beat the eggs with the oil, white sugar and vanilla extract until the mixture looks evenly combined. Add the flour, baking powder, bicarbonate of soda, salt and cinnamon, then mix gently. Stir in the grated carrots, then fold in the pecans.
  • Pour the batter into the prepared tin and bake for 40 to 50 minutes, until a skewer inserted into the centre comes out clean or with a few moist crumbs.
  • Leave the cake to cool in the tin for 10 minutes, then turn it out onto a wire rack and leave it to cool completely before icing.
  • To make the cream cheese icing, beat together the butter and cream cheese until smooth, then add the icing sugar and remaining vanilla and continue beating until creamy and spreadable.
  • Once the cake is fully cool, ice the top (and sides, if you like).
  • If you’d rather make cupcakes, use the same batter and bake until risen and a skewer comes out clean. You can also swap the pecans for walnuts if you prefer.
