Apple Pie

Apple Pie

In the fall of 2020, I received an insane amount of fallen fruit from an apple farmer over several weeks, which was already very ripe and had to be processed immediately. Unlike almost still unripe apples from the supermarket, these apples were very aromatic and thus perfectly suited to be turned into a fine apple pie. I tried numerous vegan recipes and finally landed on this one. I made small changes and so this apple pie has become my personal favorite pie of 2020 – even though I’m usually not that much of a pie fan.

Ingredients

  • 400 g 400 apples, diced

  • 250 g 250 wheat or spelt flour

  • 2 tsp 2 baking powder

  • 1 tsp 1 baking soda

  • 1 pinch 1 salt

  • 1 tsp 1 cinnamon

  • 100 g 100 cane sugar or other sugar

  • 120 ml 120 oat milk or other vegetable milk

  • 1 tsp 1 vanilla extract (optional)

  • 1 tbsp 1 apple cider vinegar or lemon juice

  • 100 g 100 applesauce, unsweetened

  • 100 g 100 vegan butter, melted (or margarine, coconut oil or other neutral oil)

Directions

  • Preheat the oven to 180 °C.
  • Lightly grease the sides of a 22 cm springform pan and line the bottom with baking paper.
  • In a large mixing bowl, combine flour, baking powder, baking soda, salt, cinnamon and sugar. Set aside.
  • In a measuring cup, whisk together vegetable milk, vanilla extract and lemon juice. Then pour the milk mixture into the dry flour mixture. Add the applesauce and melted vegan butter and mix briefly with a whisk or dough scraper until just combined.
  • Pour the batter into the prepared baking dish. Spread the diced apples on top and gently press into the batter. (If you are using tart apples, you can mix them with a little brown sugar beforehand.)
  • Bake in the preheated oven for about 45–50 minutes or until a skewer inserted into the center of the cake comes out almost clean.
  • Let the cake cool in the pan for 20 minutes. Then carefully remove and let cool further on a cooling rack.
  • Once the cake is completely cool, cut into pieces and garnish with some powdered sugar, ice cream, pecans, caramel sauce or just enjoy as is! Bon appétit!
