Mielkniddele mat Speck an Äppelkompott
Recipe by Tun de Jong
Mielkniddelen, Luxembourgish for “flour dumplings”, are a favorite in Luxembourgian cuisine. As a native Luxembourger, I too am not immune to the charms of this simple yet delicious dish. The simplicity and straightforwardness of the ingredients hark back to simpler times while the apple sauce reminds one of the quintessential season in Luxembourg: autumn.

3–4 eggs
500 g 500 wheat flour
300 g 300 curd (40 % fat)
Coarse salt
350 ml 350 cream
150 ml 150 milk
200 g 200 smoked bacon
1 kg 1 apples (preferably not too sweet)
1 tbsp 1 lemon juice
300 ml 300 water
3 tbsp 3 sugar
1 1 packet of vanilla sugar
Directions
- Sieve the flour into a big bowl.
- In a separate bowl, whisk the eggs, the curd, 100 ml of cream and the milk.
- Create a trough in the middle of the flour and fill in the egg mixture.
- Stir up the mixture and slowly work in the flour. It is important that you don’t work in all the flour at once, but bit by bit.
- Get a large quantity of salted water to boil in a pot.
- Using two spoons, form dumplings that are about 2 cm thick.
- Poach the dumplings using medium heat. The dumplings are done when they float to the surface.
- Cut up your bacon into cubes and brown them in a pan.
- Pour the remaining 250 ml of cream onto the dumplings and add the bacon cubes. Pour over the remaining bacon fat and crush a good amount of black pepper on top of it all.
- For the apple sauce, add the lemon juice and the water to a large bowl. Then peel the apples and dice them into small pieces and add them to the bowl. Add the sugar and let the whole thing simmer until the apples are soft. Then add the packet of vanilla sugar. Serve hot with the Mielkniddelen. Voilà! Gudden Appetit a loosst Iech et gutt schmaachen!
